Parmesan and Poppy Biscuits

Its is always great when people enjoy what you have baked. So here is the recipe for Otto Lengi's biscuits for those who enjoyed them at the Stratford Wine Club last Night.

These quantities make about 35 biscuits.

Ingredients

210g of Plain Flour plus a bit for dusting

1/2 tsp baking powder

1/2 tsp paprika

a pinch od cayenne pepper

a pinch of salt

1/2 tsp of fresh ground black pepper

165g unsalted butter fairly soft

165g of fresh parmesan cheese grated

80g poppy seeds

1 egg

Method

  1. Sift the flour,then add the baking powder, paprika, cayenne pepper, salt and pepper into a largish bowl

  2. Mix the softened butter with the parmesan until well combined.

  3. Add the flour and mix to form a dough

  4. Split the dough equally

  5. Then roll out each half into a sausage/log shape about 3-4cm in diameter use plenty of flour for dusting to prevent any sticking

  6. Wrap in cling film and stick it back in the fridge to firm up. About 1/2 hr

  7. Scatter the poppy seed on a flat tray brush the logs with the beaten egg and then roll in the seeds to cover. (if you want wrap and freeze at this stage)

  8. Pre Heat the Oven to 170°C. Line a baking tray with baking parchment. Cut the logs into 5-8mm discs arrange on the tray about 3cm apart.

  9. Bake for about 12 mins until golden

  10. Leave to cool job done crack on.
