The Best Ever Chicken Liver Parfait

This is very easy to make and once you have tried it you won't forget it.
Prep time 30 mins
Cooking Time 15 mins
Ingredients
500g Chicken Livers
100g Smoked Streaky Bacon
1 Onion
2 Cloves of garlic

5 Juniper berries
1 pinch Ground Cinnamon
150g + 50g of Butter
1 Tbs of Walnut oil
1 pinch of Piment d'espelette
100ml of Port
Salt
Method
Cook the onion and garlic in walnut oil until golden and set aside.
Add the chicken livers chopped bacon and juniper berries. Just sear the chicken livers and then set aside. Do not over cook them.
Deglaze the pan with the port, scraping up all the bits from the bottom of the pan and cook until syrupy.
Process in a magimix or similar with 150g of butter, then add the cinnamon and the salt.
Mold the parfait into terrine dishes and keep chilled
Melt the 50g of butter and cover the parfaits with the melted butter and sprinkle with piment d'Espelette. ( or use paprika and a few dried herbs)
That's it. Serve with whatever bread takes your fancy.
